This is seriously the easiest chocolate cake ever. My kids make this cake because it’s just THAT EASY. Just throw it in, mix and bake. The boys have even been known to whip it up for late night milo and movie sessions. The hardest part will be deciding whether to make one large cake or split the batter between a cake tin AND a muffin tray. I always make a bar cake and a tray of muffins.
HERE’S WHAT YOU NEED…
2 cups castor sugar
2 cups sifted Self Raising flour
4 eggs
200g melted butter
4 tablespoons sifted cocoa
2 tablespoons hot water
1 cup cold water with half teaspoon bi carb soda
Dash of vanilla
LET’S MAKE THIS…
Pre heat oven to 180 degrees and prepare your cake tray/muffin tin.
Chuck everything in your bowl and mix on high for two minutes. I know, so technical right. Seriously just bang it all into the bowl and mix.
Time to split some cake batter between your cake tin and muffin tray, then into the oven for around 45-50 minutes. You know the drill, clean skewer and all. Of course keep an eye on your muffins, 20-25 minutes and those babies will be cooked.
Now what’s a cake without icing?
For an easy icing melt chocolate (around a cup of dark choc melts) add a good splash of cream and stir vigorously until glossy.
Yup, yum!! Spread chocolate over cake or dip the tops of the muffins into the chocolate icing.
See, told you it was super easy. Do your kids help you in the kitchen, or better still can they make a cake from scratch on their own?
What was the last cake you baked?
A few weeks ago I did some baking for my Sister’s wake. Being a bit to tired and emotional I asked my Nephew if he could help me bake my famous Orange & Almond Cake. I had already cooked the whole oranges and he took direction to blend the oranges then throw in the eggs , sugar , ground almonds, and gluten free almonds. He blitzed it altogether then poured in to tin. A generous sprinkle of almonds on top, then bake. Abracadabra ! he had made this cake. Family pullling together at a tough time makes yummy cake .
