My Go Go Goji slice ticks lots of boxes, these babies are loaded with fruit and oats and are ‘lick your lips’ tasty with enough super foods in them to eat guilt free. A perfect way to satisfy your afternoon sweet craving and the small fry will love them too.
Here’s what you need…
3 Ripe bananas
3 cups of rolled oats (steel-cut if you have digestive issues)
8-10 chopped dates
1/2 cup goji berries
1/2 cup chopped walnuts
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
O.K LET’S MAKE IT…
Start by preheating your oven to 175 degrees and line a slice tray (16 x 25 cm) with baking paper. Mash the bananas-perfect job for the small fry if they are helping. Add all other ingredients to your mixing bowl, slide in the mashed banana and mix with a wooden spoon until well combined.
Spoon into the lined tray and using the back of your wooden spoon smooth the surface.
Bake for 30-35 minutes, be careful not to burn the fruit…there’s a good dose of fructose there. Remove from oven, when cool cut into bars.
WANNA BOOST IT?
Serve warm with ice cream and a shake of icing sugar for dessert…ALL the yum!
TIP
Let’s not get too pedantic, if walnuts aren’t your nut of choice then use pecans or slivered almonds.
