Far out batman, I only started blogging 9 weeks ago and I’m totally MIA with the Christmas posts! Every time I open Facebook or Instagram there’s another blog post from a dedicated and hardworking blogger, posts on gifts, shopping, decorating, Xmas fashion, cooking…everywhere! Well I finally busted out and I’m sharing my ‘EASY PEASY PUDDIN BALLS’ recipe with y’all.
This is a great go to recipe that can have just 2 ingredients or 22…depending on how stocked your pantry is and how faarked you feel 🙂
Here we go…
Grab 1 dark Xmas cake…homebrand is more than alright.
Add a handful of mini mallows, and a handful of shredded coconut…you might like to also add cherries, nuts, cranberries…whatever you fancy, chuck it all in there.
Add a good splodge of port or if the kiddies are going to be tucking in use orange juice instead. Just enough to help bring it all together. (start with 2 tbspn)
NOW… get your hands in there and mush it all into a large ball making sure all ingredients are fairly evenly distributed.
Roll into bite sized balls and place on a lined tray and into the freezer for at least half an hour.
Melt a packet of chocolate melts…I like to use dark or white.
Remove balls from freezer and pop a ball on a spoon and into the chocolate, roll around until covered in chocolate and lift spoon away from bowl of melted chocolate. As you roll the ball off the spoon and onto a tray drag your spoon over the top of the ball towards you…this leaves a little flick of chocolate on the top instead of across the tray and looks quite professional.
Repeat and refrigerate…if you wanna get fancy pants melt a little chocolate and pop in a plastic zip lock back, snip the corner and drizzle over choc coated balls. If your Puddin Balls are dark chocolate then drizzle white chocolate and vice versa.
And that’s it, mush it and coat it…tastes waaaaay yummier and no one will know your secret…well except me (wink). Right, I think this qualifies as my Xmas blog post quota 🙂 Merry Christmas x
